Wash and scrub the potatoes well, then cut them into roughly 1-inch cubes. Don't worry about making them perfect!

Mince the garlic using a garlic press or knife. Be careful, I almost lost a fingertip once!

In a large bowl, toss the potatoes with olive oil, minced garlic, rosemary, salt, and pepper. Make sure everything is nicely coated.

Spread the potatoes in a single layer on a baking sheet and roast at 400°F (200°C) for 30-40 minutes, flipping halfway through.

Remove from the oven, dot with butter, and stir gently to coat.

Return to the oven for 5-10 minutes to melt the butter and crisp the potatoes. Serve immediately!
