Pat the steaks dry and season generously with salt, pepper, and garlic powder. Let them sit at room temperature for about 30 minutes.

Preheat your Blackstone griddle to medium-high heat. It should be screaming hot!

Add olive oil to the griddle. Sear steaks for 3-4 minutes per side for medium-rare. Don’t move them around too much!

Add butter and rosemary (if using) to the griddle. Baste the steaks with the melted butter.

Continue cooking to your desired doneness, basting occasionally. Use a meat thermometer!

Remove steaks and let them rest for 5-10 minutes before slicing and serving.
