# Instructions:

01 - Gently mix the starter into the lukewarm water.
02 - Whisk together flour, sugar, and salt. Slowly add the water mixture to the dry ingredients, mixing until a shaggy dough forms.
03 - Knead for 8-10 minutes until smooth and elastic.
04 - Lightly oil a bowl, place the dough in it, cover, and let it rise in a warm place for 4-6 hours, or until doubled.
05 - Gently punch down the dough, divide it in half, roll each half into a rectangle, sprinkle with cinnamon sugar, and roll it up tightly. Place the rolls in a lightly oiled baking pan.
06 - Cover and let rise for 30-45 minutes. Preheat oven to 375°F (190°C). Bake for 25-30 minutes, or until golden brown.

# Notes:

01 - Don’t overknead the dough – it can make the focaccia tough.
02 - Store leftovers in an airtight container at room temperature for up to 2 days. Avoid microwaving!
03 - Substitute whole wheat flour for some of the all-purpose flour for a nuttier flavor.
04 - Serve with cream cheese or butter, and a warm mug of tea or coffee.
