01 - 1.5 lbs Butternut Squash
02 - 1 lb Pasta
03 - 1 cup Heavy Cream

05 - 2 tbsp Fresh Sage
06 - 1/4 tsp Nutmeg
07 - Salt and Pepper

08 - 1/2 cup Grated Parmesan Cheese

# Instructions:

01 - Preheat oven to 400°F. Cube squash, toss with olive oil, salt, and pepper. Roast for 30-40 minutes, until tender.
02 - Cook pasta according to package directions. Don't forget to salt the water!
03 - Sauté garlic in olive oil until fragrant. Add roasted squash, heavy cream, sage, nutmeg, salt, and pepper. Simmer for 5-7 minutes.
04 - Drain pasta and add to skillet. Toss to coat. Stir in half the Parmesan cheese.
05 - Serve immediately, garnished with remaining Parmesan and olive oil (optional).
