Preheat oven to 400°F. Cube squash, toss with olive oil, salt, and pepper. Roast for 30-40 minutes, until tender.

Cook pasta according to package directions. Don't forget to salt the water!

Sauté garlic in olive oil until fragrant. Add roasted squash, heavy cream, sage, nutmeg, salt, and pepper. Simmer for 5-7 minutes.

Drain pasta and add to skillet. Toss to coat. Stir in half the Parmesan cheese.

Serve immediately, garnished with remaining Parmesan and olive oil (optional).
