Peel and dice potatoes into 1-inch cubes. Wash thoroughly!

Melt butter in a pot, sauté onion until soft and golden, then add garlic until fragrant.

Add potatoes and broth, bring to a boil, then simmer until potatoes are tender (15-20 mins). Stir occasionally!

Carefully transfer to a blender (or use an immersion blender), add cream and thyme, blend until smooth. Be cautious with hot liquids!

Return to pot, season with salt and pepper to taste. Adjust seasonings as needed!

Garnish and serve warm. Leftovers are even better the next day!
