01 - 2 lbs Yukon Gold Potatoes
02 - 6 cups Vegetable Broth
03 - 1 cup Heavy Cream
04 - 1 large Yellow Onion
05 - 4 cloves Garlic

08 - 2 sprigs Fresh Thyme

# Instructions:

01 - Peel and dice potatoes into 1-inch cubes. Wash thoroughly!
02 - Melt butter in a pot, sauté onion until soft and golden, then add garlic until fragrant.
03 - Add potatoes and broth, bring to a boil, then simmer until potatoes are tender (15-20 mins). Stir occasionally!
04 - Carefully transfer to a blender (or use an immersion blender), add cream and thyme, blend until smooth. Be cautious with hot liquids!
05 - Return to pot, season with salt and pepper to taste. Adjust seasonings as needed!
06 - Garnish and serve warm. Leftovers are even better the next day!
