Wash and chop potatoes into bite-sized pieces (about 1-inch cubes).

Crumble sausage onto a hot Blackstone griddle (medium-high heat) and cook until browned and cooked through.

Push sausage aside, add olive oil, and sauté onion and bell peppers until softened and slightly charred.

Add potatoes to the griddle, spreading them out in a single layer. Season with salt, pepper, paprika, etc.

Stir everything together and cook for 15-20 minutes, stirring occasionally, until potatoes are tender and golden brown.

Remove from griddle, garnish with parsley/chives and lemon juice. Serve immediately and enjoy!
