# Ingredients:

01 - 2 pounds assorted bell peppers (red, yellow, orange)
02 - 1 small red onion, thinly sliced

04 - 1/2 cup granulated sugar
05 - 6 cloves garlic, minced
06 - 2 teaspoons kosher salt
07 - 1 teaspoon freshly cracked black peppercorns

# Instructions:

01 - Wash and slice peppers into rings or strips. Remove stems and seeds if desired.
02 - In a large bowl, combine peppers, vinegar, sugar, garlic, salt, onion, and peppercorns. Stir well to coat.
03 - Pack pepper mixture tightly into a clean jar, leaving about 1/2 inch of headspace. Don't overpack!
04 - Seal jar tightly and refrigerate for at least 24 hours. The longer they marinate, the better!
05 - After 24 hours, taste and adjust seasoning as needed. Add more vinegar for tang, salt for sweetness.

# Notes:

01 - Don’t overpack the jar! Leave that headspace, or you’ll have a vinegar explosion on your hands.
02 - Properly stored in the fridge, they’ll last for about 2 months. But honestly, they’re usually gone long before then.
03 - I’ve substituted brown sugar for granulated, and it gave the peppers a lovely caramel flavor.
