Pit the cherries (use a cherry pitter or a chopstick!). Combine the cherries, sugar, lemon juice, cornstarch, and cinnamon in a bowl. Gently toss to coat.

In a separate bowl, combine flour, oats, brown sugar, and salt. Cut in the cold butter using a pastry blender or your fingers until crumbly. Don't overmix!

Pour the cherry filling into a baking dish. Sprinkle the crumble topping evenly over the cherries.

Bake at 375°F (190°C) for 35-40 minutes, or until golden brown and bubbly. Check at 30 minutes!

Let cool for 15 minutes before serving. This allows the filling to set.

Serve warm with vanilla ice cream or whipped cream. Mmm!
