02 - 2 cups white vinegar
03 - 1 cup water

# Instructions:

01 - Wash the okra thoroughly and trim the stems. This is the most tedious part, so put on a podcast!
02 - In a saucepan, combine vinegar, water, sugar, salt, garlic, red pepper flakes, and peppercorns. Bring to a boil, stirring until sugar and salt dissolve.
03 - Add the okra to the boiling brine, reduce heat, cover, and simmer for 10-15 minutes until tender-crisp.
04 - Remove okra with a slotted spoon and pack tightly into sterilized jars. Don't leave too much space!
05 - Pour hot brine over okra, leaving 1/2 inch headspace. Wipe rims, and seal tightly. Double check your seals!
06 - Let jars cool completely. You'll hear a satisfying pop as they seal. Store in a cool, dark place or refrigerator.
