01 - 1 lb boneless pork loin, cut into bite-sized pieces
02 - 1 cup sliced carrots
03 - 1 cup sliced celery
04 - 1 cup sliced onions
05 - 8 oz cremini mushrooms

06 - Salt and pepper to taste
07 - 6 cloves garlic, minced
08 - 1 tbsp grated fresh ginger

10 - 1/4 cup oyster sauce

# Instructions:

01 - Season the pork with salt and pepper. Brown it in a wok or large skillet over medium-high heat until browned.
02 - Add garlic and ginger to the wok; sauté until fragrant, about 30 seconds. Don't burn the garlic!
03 - Add carrots, celery, onions, and mushrooms. Sauté until slightly softened, about 5 minutes.
04 - Pour in soy sauce and oyster sauce. Stir, simmer until sauce thickens (about 10 minutes).
05 - Taste and adjust seasoning. Add water or broth to loosen if needed.
