Season the pork with salt and pepper. Brown it in a wok or large skillet over medium-high heat until browned.

Add garlic and ginger to the wok; sauté until fragrant, about 30 seconds. Don't burn the garlic!

Add carrots, celery, onions, and mushrooms. Sauté until slightly softened, about 5 minutes.

Pour in soy sauce and oyster sauce. Stir, simmer until sauce thickens (about 10 minutes).

Taste and adjust seasoning. Add water or broth to loosen if needed.
