Preheat oven to 400°F (200°C). Wrap a whole head of garlic in foil and roast for 30-40 minutes, until soft and caramelized.

Once cool, squeeze roasted cloves from their skins and mash into a smooth paste.

In a bowl, whisk together mayonnaise, lemon juice, garlic paste, anchovy paste, Dijon mustard, Worcestershire sauce, and Parmesan cheese until smooth and creamy.

Taste and adjust seasonings. Add more lemon for tang, Parmesan for saltiness, salt and pepper to taste.

Chill for at least 30 minutes for best flavor. Seriously, it's worth it!
