# Ingredients:

01 - 3 medium zucchini
02 - 1 medium onion, finely chopped
03 - 2-3 cloves garlic, minced
04 - 2 large eggs
05 - 1/2 cup breadcrumbs
06 - 1/4 cup fresh parsley, chopped

08 - Pepper
09 - Pinch of nutmeg
10 - Dash of garlic powder

# Instructions:

01 - Grate the zucchini and squeeze out all the excess moisture using a clean kitchen towel. This is super important for crispy patties!
02 - In a large bowl, combine the grated zucchini, onion, garlic, eggs, breadcrumbs, parsley, and seasonings. Mix until well combined, but don’t overmix.
03 - Shape the mixture into small patties, about 1/2 inch thick. I usually make them around 3 inches in diameter, but you can make them any size you like.
04 - Heat olive oil in a large skillet over medium heat. Fry the patties for about 3-4 minutes per side, or until golden brown and crispy. Don’t overcrowd the pan!
05 - Remove the patties from the skillet and place them on a plate lined with paper towels to drain excess oil. Gently pat them with a clean paper towel if needed.
06 - Serve immediately and enjoy! These are amazing on their own or with a side of your favorite dipping sauce.

# Notes:

01 - Squeezing out the excess moisture from the zucchini is KEY for crispy patties.
02 - Store leftover patties in an airtight container in the refrigerator for up to 3 days. Don't freeze them!
03 - Experiment with different breadcrumbs – panko is my favorite!
04 - Serve with a side salad, roasted vegetables, or a simple green salad. A dollop of sour cream or tzatziki sauce is also amazing!
