Wash and slice zucchini into half-moons. Toss with olive oil, garlic, rosemary, lemon zest, salt, and pepper.

Spread zucchini on a baking sheet and roast at 400°F (200°C) for 20-25 minutes, or until tender and slightly browned.

Squeeze lemon juice over roasted zucchini and toss to coat.
