# Ingredients:

→ Main Ingredients

01 - 2 pounds zucchini
02 - 1 cup grated parmesan cheese
03 - 4 cloves garlic

→ Seasonings & Spices

04 - Salt
05 - Pepper

→ Garnish & Toppings

06 - Fresh basil leaves
07 - Balsamic glaze (optional)

→ Optional Extras

08 - 1/2 cup breadcrumbs (Panko recommended)

# Instructions:

01 - Slice the zucchini into 1/2-inch thick half-moons. Wash and thoroughly dry before grilling.
02 - Combine olive oil, minced garlic, salt, pepper, and half the parmesan cheese in a bowl. Toss zucchini until coated.
03 - Preheat grill to medium heat. Grilling too fast will burn it, too slow will steam it. Low and slow is best!
04 - Grill zucchini for 3-4 minutes per side, until tender and grill-marked. Watch closely to prevent burning.
05 - Sprinkle remaining parmesan cheese and breadcrumbs (if using) over the zucchini. Grill for 1-2 minutes until cheese melts.
06 - Remove from grill, let cool slightly, garnish with basil, and serve immediately. A sprinkle of balsamic glaze is amazing!

# Notes:

01 - Don't overcrowd the grill!
02 - Store leftovers in an airtight container in the fridge for up to 3 days.
03 - Asiago or Pecorino Romano are great parmesan substitutes.
04 - Serve with a fresh salad or grilled chicken.
