Slice the zucchini into 1/2-inch thick half-moons. Wash and thoroughly dry before grilling.

Combine olive oil, minced garlic, salt, pepper, and half the parmesan cheese in a bowl. Toss zucchini until coated.

Preheat grill to medium heat. Grilling too fast will burn it, too slow will steam it. Low and slow is best!

Grill zucchini for 3-4 minutes per side, until tender and grill-marked. Watch closely to prevent burning.

Sprinkle remaining parmesan cheese and breadcrumbs (if using) over the zucchini. Grill for 1-2 minutes until cheese melts.

Remove from grill, let cool slightly, garnish with basil, and serve immediately. A sprinkle of balsamic glaze is amazing!
