Add diced onion to the same pan with beef. Cook 4-5 minutes until soft and translucent. Add minced garlic and cook 30 seconds until fragrant.

Wrap corn tortillas in damp paper towels and microwave for 30-45 seconds until pliable and warm.

Spread 1/2 cup enchilada sauce in 9x13 baking dish. Fill each tortilla with 1/3 cup beef mixture and cheese, roll tightly, place seam-side down in dish.

Pour remaining sauce over enchiladas, sprinkle with remaining cheese. Bake at 375°F for 20-25 minutes until cheese is melted and bubbly.
