Wash, peel, and chop the peaches into small pieces. Don’t stress about making them perfectly uniform; it doesn’t matter!

Combine peaches, sugar, lemon juice, water, and salt in a saucepan. Simmer until soft and juicy (about 10-15 minutes), stirring occasionally.

Let cool slightly. Blend with an immersion blender until completely smooth. If you don’t have one, use a regular blender carefully!

Stir in vanilla extract if using. Give it a good mix!

Pour into a freezer-safe container and freeze for at least 4 hours, or until solid. Overnight is best!
