01 - 1.5 lbs carrots, peeled and chopped
02 - 4 tablespoons unsalted butter
03 - 2 tablespoons honey

# Instructions:

01 - Preheat oven to 400°F (200°C). Chop carrots – try not to cry too much! This is where I always end up with carrot juice everywhere. Oops.
02 - In a large bowl, toss carrots with melted butter, honey, garlic, soy sauce, thyme, salt, and pepper. Make sure everything is well coated. Get your hands in there! It's more fun that way.
03 - Spread carrots in a single layer on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized. Keep an eye on them – ovens vary! I once burnt a whole batch, I tell you.
04 - For extra caramelization, broil for the last 2-3 minutes. Watch them like a hawk though, broiling is intense!
