Pat the pork chops dry with paper towels. Season generously with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 3-4 minutes per side, until browned.

In the same skillet, add honey, soy sauce, garlic, and ginger (if using). Bring to a simmer, stirring constantly.

Reduce heat to medium-low. Pour sauce over pork chops, basting frequently for 5-7 minutes, or until cooked through and glazed.

Remove pork chops from skillet and let rest for a few minutes before serving.
