Slice off the tops of the garlic heads to expose the cloves. Drizzle with olive oil, salt, and pepper.

Roast on a baking sheet at 400°F (200°C) for 40 minutes, or until soft and golden.

Let cool slightly, then squeeze the roasted cloves out of their skins. Use a fork—it's messy but fun!

In a food processor, combine roasted garlic, butter, rosemary, and thyme. Whizz until smooth and creamy. Add more salt and pepper to taste.

Transfer to a bowl, cover, and chill for at least 30 minutes to firm up.
