Wash and pit the cherries. This is the most time-consuming part, but totally worth it!

Combine all ingredients in a saucepan. Stir well to ensure even distribution of sugar.

Bring to a boil, then reduce heat and simmer for 15-20 minutes, stirring frequently, until thickened.

Use the plate test: If a spoonful wrinkles when cooled, it's ready. If not, simmer a bit longer.

Pour into sterilized jars, leaving 1/4 inch headspace. Wipe rims, seal tightly.

For longer shelf life, process jars in a boiling water bath for 10 minutes.
