# Ingredients:

01 - 4 cups cubed watermelon
02 - 4 ounces crumbled feta cheese
03 - ½ small red onion, thinly sliced
04 - ½ cup chopped fresh mint

08 - ½ cup diced cucumber

10 - 2 tbsp red wine vinegar

# Instructions:

01 - Cube the watermelon into roughly equal-sized pieces. I always use a sharp knife and try to make them uniform!
02 - In a large bowl, gently combine the watermelon, feta, red onion, mint, cucumber (optional), and olives (optional). Toss gently to avoid smashing the watermelon!
03 - In a small bowl, whisk together red wine vinegar, olive oil, salt, and pepper. Taste and adjust seasonings as needed. Sometimes I add a touch of honey for sweetness.
04 - Pour the dressing over the salad and toss gently to combine. Isn't it pretty?
05 - For extra freshness, cover and chill for at least 30 minutes. I often skip this step and eat it right away!
06 - Garnish with extra mint and serve immediately. Sometimes I add extra feta for that salty kick!

# Notes:

01 - A sharp knife makes cubing the watermelon so much easier!
02 - Store leftovers in an airtight container in the fridge for up to 2 days (but it's best fresh!).
03 - Apple cider vinegar can be substituted for red wine vinegar.
04 - Serve with grilled chicken or fish for a complete meal.
