Cube the watermelon into roughly equal-sized pieces. I always use a sharp knife and try to make them uniform!

In a large bowl, gently combine the watermelon, feta, red onion, mint, cucumber (optional), and olives (optional). Toss gently to avoid smashing the watermelon!

In a small bowl, whisk together red wine vinegar, olive oil, salt, and pepper. Taste and adjust seasonings as needed. Sometimes I add a touch of honey for sweetness.

Pour the dressing over the salad and toss gently to combine. Isn't it pretty?

For extra freshness, cover and chill for at least 30 minutes. I often skip this step and eat it right away!

Garnish with extra mint and serve immediately. Sometimes I add extra feta for that salty kick!
