Preheat oven to 375°F. In a large oven-safe skillet or Dutch oven, heat 1 tbsp olive oil over medium-high heat. Add 1 medium yellow onion, diced, and sauté for 3-4 minutes until softened. Stir in 3 cloves garlic, minced, and cook for another minute until fragrant.

Add 1.5 lbs lean ground turkey to the skillet. Break it apart and cook until browned, about 5-7 minutes. Drain any excess fat. Stir in 8 oz diced cooked ham (low sodium) and cook for 2 minutes to warm through.

Season the turkey and ham mixture with 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, and salt and black pepper to taste. Reduce heat to medium-low. Add 8 oz cream cheese, softened, 1/2 cup heavy cream, and 1 cup beef broth (low sodium) to the skillet. Stir constantly until the cream cheese is fully melted and the sauce is smooth and creamy.

Remove the skillet from heat. Stir in 1.5 cups of the shredded sharp cheddar cheese and all of the 1/2 cup shredded Monterey Jack cheese until melted and well combined with the turkey mixture. This forms the rich base of your Low Carb Turkey Ham Cheeseburger Casserole.

If not using an oven-safe skillet, transfer the mixture to a 9x13 inch baking dish. Top with the remaining 1/2 cup shredded sharp cheddar cheese. Bake for 20-25 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.
