# Ingredients:

01 - 1 head of garlic
02 - 1 cup heavy cream
03 - 1/2 cup grated Parmesan cheese
04 - 1/4 cup butter

→ Seasonings & Spices

05 - Salt
06 - Freshly ground black pepper

07 - Fresh parsley

→ Optional Extras

08 - Pinch of nutmeg
09 - Splash of white wine

# Instructions:

01 - Preheat your oven to 400°F (200°C). Slice off the top of the garlic head to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 40 minutes.
02 - While the garlic roasts, melt the butter in a saucepan over medium heat. Once melted, add the heavy cream and bring to a simmer.
03 - Squeeze the roasted garlic cloves into the cream. Stir in the Parmesan cheese until it's melted and smooth.
04 - Slowly whisk in some pasta water to thin the sauce to your desired consistency.
05 - Season with salt and pepper to taste. Serve immediately over your favorite pasta.
06 - Garnish with fresh parsley before serving.

# Notes:

01 - Don't overcook the garlic! It'll get bitter.
02 - Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop.
03 - Nutritional yeast can be a surprisingly good substitute for Parmesan if you're dairy-free.
04 - Serve with a crusty bread for dipping – perfection!
