Preheat your oven to 400°F (200°C). Slice off the top of the garlic head to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 40 minutes.

While the garlic roasts, melt the butter in a saucepan over medium heat. Once melted, add the heavy cream and bring to a simmer.

Squeeze the roasted garlic cloves into the cream. Stir in the Parmesan cheese until it's melted and smooth.

Slowly whisk in some pasta water to thin the sauce to your desired consistency.

Season with salt and pepper to taste. Serve immediately over your favorite pasta.

Garnish with fresh parsley before serving.
