Wash and slice the peaches. I usually cut them in half and then slice the halves again, but you can dice them if you prefer.

In a bowl, gently combine the peaches, heavy cream, sugar, vanilla, and lemon juice. Stir until combined.

Cover and chill for at least 2 hours, or preferably overnight. The longer it chills, the better it tastes!

After chilling, taste and add more sugar if needed. My peaches vary in sweetness, so I always do a taste test.

Give it a gentle stir. Pour into bowls or glasses. Garnish with toasted almonds (optional).
