# Instructions:

01 - In a large bowl, whisk together the flour, baking powder, granulated sugar, brown sugar, and salt. Make sure there are no lumps!
02 - Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Cold butter is essential!
03 - In a separate bowl, whisk together the eggs, milk, lemon zest, and vanilla extract. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Don't overmix!
04 - Gently fold in the diced peaches. Be careful not to overmix; you want to preserve the texture of the peaches.
05 - Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick circle. Use a sharp knife or a biscuit cutter to cut out scones. Place them on a baking sheet lined with parchment paper. Bake at 400°F (200°C) for 15-20 minutes, or until golden brown.
