Thinly slice your steak, onions, and green pepper. This is where my kitchen usually looks like a warzone – but it's a delicious warzone!

Heat up your Blackstone griddle to medium-high heat. Add butter and olive oil. Sear steak for 2-3 minutes per side. Don't overcrowd!

Add remaining butter and olive oil. Sauté onions and peppers until softened and slightly caramelized, about 5-7 minutes. Stir frequently!

Return steak to the griddle. Add sautéed onions and peppers. Top with provolone cheese and cover to melt.

Once the cheese is melted, serve immediately on hoagie rolls. Add extra salt and pepper if desired.
