In a bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, paprika, salt, pepper, and oregano. Add chicken breasts, ensuring they’re evenly coated. Marinate for at least 30 minutes, or up to 4 hours.

Preheat grill to medium-high heat. Clean the grates well to prevent sticking. This is where I usually realize I'm out of grill cleaner...oops!

Place chicken on the preheated grill. Grill for 5-7 minutes per side, or until internal temperature reaches 165°F. Use a meat thermometer!

Remove chicken from grill and let it rest for 5-10 minutes before slicing. This allows juices to redistribute.

Slice chicken against the grain and serve immediately. Add a squeeze of extra lemon juice!
