Wash and slice the peaches. No need to peel unless you're feeling fancy. I usually skip it, honestly.

Combine peaches, sugar, lemon juice, water, vanilla, and salt in a blender. Pulse until smooth but with some peach chunks.

Pour mixture into popsicle molds, leaving space at the top. Freeze for at least 4-6 hours, or overnight.

Run molds under warm water to loosen popsicles. Gently pull them out and enjoy!

Add fresh mint leaves to molds before freezing, or drizzle honey after freezing.
