Pat the lamb chunks dry with paper towels and season generously with salt and pepper.

In a large skillet, sauté the chopped onion and minced garlic until softened.

Transfer the sautéed onions and garlic to the slow cooker. Add the lamb, tomatoes, broth, and spices. Stir well.

Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the lamb is tender.

Remove the lamb and shred it using two forks. Reserve some cooking liquid.

Return the shredded lamb to the slow cooker. Add reserved liquid if needed. Warm through and serve in tortillas with toppings.
