Combine warm milk, 1 tbsp sugar, and yeast. Let sit for 5-10 minutes until foamy.

Whisk in eggs and melted butter once yeast is foamy.

Whisk flour and salt; gradually add to wet ingredients, mixing until just combined.

Grease a bowl, place dough in, turn to coat. Cover and let rise in a warm place for about 1 hour, or until doubled.

Mix brown sugar and cinnamon (plus nutmeg, if using).

Roll dough into a rectangle, spread butter, sprinkle filling. Roll into a log, cut into 12 slices, place in greased pan.

Cover and let rise for 30-45 minutes. Preheat oven to 350°F (175°C). Bake for 25-30 minutes, or until golden.
