# Ingredients:

→ Main Ingredients

01 - 1 lb sirloin or ribeye steak, thinly sliced
02 - 1 ½ cups long-grain white rice
03 - 1 cup queso cheese
04 - 2 cups beef broth

→ Seasonings & Spices

05 - 1 teaspoon chili powder
06 - ½ teaspoon cumin
07 - ½ teaspoon smoked paprika
08 - Salt and pepper to taste

→ Garnish & Toppings

09 - Chopped cilantro
10 - Sliced jalapeños
11 - Sour cream

→ Optional Extras

12 - 1 medium onion, chopped
13 - 2 cloves garlic, minced

# Instructions:

01 - Heat a large skillet over medium-high heat. Add the steak and cook until browned on both sides, about 2-3 minutes per side.
02 - Remove the steak from the skillet. Add the onion and garlic, and sauté until softened, about 5 minutes.
03 - Stir in the rice, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute. Pour in the beef broth. Bring to a boil.
04 - Reduce heat to low, cover, and simmer for 15 minutes, or until the rice is cooked through and the liquid is absorbed.
05 - Remove from heat, stir in the queso and the cooked steak. Let it sit for a few minutes so the cheese can melt.
06 - Garnish with cilantro, jalapeños, and sour cream. Serve immediately.

# Notes:

01 - Don't overcook the steak! Medium-rare is best.
02 - Leftovers are best stored in an airtight container in the refrigerator for up to 3 days.
03 - Chicken broth can be substituted for beef broth, but the flavor won't be as rich.
04 - Serve with warm tortillas for scooping up all that delicious queso!
