Heat a large skillet over medium-high heat. Add the steak and cook until browned on both sides, about 2-3 minutes per side.

Remove the steak from the skillet. Add the onion and garlic, and sauté until softened, about 5 minutes.

Stir in the rice, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute. Pour in the beef broth. Bring to a boil.

Reduce heat to low, cover, and simmer for 15 minutes, or until the rice is cooked through and the liquid is absorbed.

Remove from heat, stir in the queso and the cooked steak. Let it sit for a few minutes so the cheese can melt.
