12 - 1/2 Bell pepper, chopped
13 - Optional: Jalapeños, fresh corn

# Instructions:

01 - Season the steak generously with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak for 3-4 minutes per side, until cooked to your liking. Remove from skillet and let rest, then slice.
02 - In the same skillet, add chopped onion and bell pepper. Sauté for about 5 minutes, until softened. Don't forget to season!
03 - Add cooked rice, queso, and seasoning blend. Stir until queso is melted and rice is heated through. Taste and adjust seasoning.
04 - Gently fold in sliced steak. Don't break up the steak too much!
05 - Sprinkle grated cheddar cheese over the top and let it melt slightly.
06 - Serve immediately while hot and bubbly. Leftovers are great too!

# Notes:

01 - Don't overcrowd the pan when searing the steak.
02 - Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet.
03 - Instead of steak, try chicken or shrimp!
04 - Serve with guacamole, sour cream, or a side salad.
