Season the steak generously with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak for 3-4 minutes per side, until cooked to your liking. Remove from skillet and let rest, then slice.

In the same skillet, add chopped onion and bell pepper. Sauté for about 5 minutes, until softened. Don't forget to season!

Add cooked rice, queso, and seasoning blend. Stir until queso is melted and rice is heated through. Taste and adjust seasoning.

Gently fold in sliced steak. Don't break up the steak too much!

Sprinkle grated cheddar cheese over the top and let it melt slightly.

Serve immediately while hot and bubbly. Leftovers are great too!
