# Ingredients:

→ Main Ingredients

01 - 4 cups cubed seedless watermelon
02 - 2 cucumbers, thinly sliced
03 - 1/2 red onion, thinly sliced

→ Seasonings & Spices

04 - Salt and pepper to taste

→ Garnish & Toppings

05 - 1/2 cup crumbled feta cheese
06 - 1/4 cup chopped fresh mint

→ Optional Extras

07 - 1-2 jalapeños, finely minced (optional)
08 - 2 tbsp balsamic glaze (optional)

# Instructions:

01 - Cut the watermelon into bite-sized cubes. Slice the cucumbers into half-moons.
02 - In a large bowl, gently toss together the watermelon, cucumber, and red onion. Be gentle, you don't want to mash the watermelon!
03 - Sprinkle in the feta cheese and mint. Drizzle with lime juice and olive oil.
04 - Gently toss everything together until it's nicely coated.
05 - Taste and adjust seasoning. Add more salt, pepper, lime juice, or even a pinch of sugar if needed.
06 - Cover and refrigerate for at least 30 minutes before serving. Enjoy!

# Notes:

01 - Don't over-toss the salad! You want to keep the watermelon and cucumber from getting mushy.
02 - This salad is best served fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
03 - Instead of feta, try goat cheese or halloumi.
04 - Serve with grilled chicken or fish, or on its own as a light lunch or snack.
