# Ingredients:

01 - 1 cup Garlic Scapes
02 - 1 cup Fresh Basil
03 - 1/2 cup Parmesan Cheese

# Instructions:

01 - Wash and roughly chop the garlic scapes. Chop the basil leaves, zest and juice the lemon, and mince the garlic. This is usually where I make a mess with lemon juice!
02 - Combine all ingredients in a food processor or blender. Pulse until combined but still slightly chunky. Don't over-process!
03 - Taste and adjust seasonings. Add more lemon, garlic, salt, pepper, or olive oil as needed. This is where I sometimes add too much salt, oops!
04 - Serve immediately or store in an airtight container in the refrigerator for up to a week.

# Notes:

01 - Don't over-process the pesto! A little chunkiness is key.
02 - Store in an airtight container in the fridge for up to a week. Freezing is okay, but texture changes.
03 - Walnuts or sunflower seeds can replace pine nuts.
04 - Serve over pasta, on bread, or use as a marinade!
