Wash and roughly chop the garlic scapes. Chop the basil leaves, zest and juice the lemon, and mince the garlic. This is usually where I make a mess with lemon juice!

Combine all ingredients in a food processor or blender. Pulse until combined but still slightly chunky. Don't over-process!

Taste and adjust seasonings. Add more lemon, garlic, salt, pepper, or olive oil as needed. This is where I sometimes add too much salt, oops!

Serve immediately or store in an airtight container in the refrigerator for up to a week.
