Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the garlic scapes and sauté for about 5-7 minutes, until softened and slightly browned.

Stir in the nutritional yeast, lemon juice, salt, and pepper. Cook for another minute or two, to let the flavors meld. Taste and adjust seasonings.

Add the cooked pasta to the skillet. Toss to coat. Add reserved pasta water if needed for desired consistency.

Stir in the vegetable broth and let it simmer for a couple of minutes, allowing the flavors to deepen.

Serve immediately, garnished with vegan parmesan cheese (if using) and fresh parsley.
